How to choose a commercial stick blender in three steps
Choosing the right immersion blender comes down to three questions, in order.
Step 1 — Match the shaft length to your pot
The blade has to reach the bottom of your deepest pot while the motor stays well clear of the liquid. Measure your largest stockpot and pick a shaft that comfortably exceeds its depth — too short and you can't blend the bottom; too long and a small batch is awkward. Shaft length is the single most common sizing mistake in this category.
Step 2 — Size the power to your batch and duty
Light café batches blend happily on a smaller motor; large stockpots and all-day production need a heavy-duty unit that won't bog down or overheat under sustained load. Think in terms of how big a pot you process and how often — a unit that's underpowered for your volume will struggle, run hot, and wear out early.
Step 3 — Decide on speed control and attachments

How a stick blender differs from a jug or bar blender
A stick blender goes into the food; a jug blender brings the food to it. Immersion units win when you're processing hot liquids in volume — soups, sauces, purees — because there's no transferring scalding liquid between vessels. Light and mid-duty units are fine for occasional café batches, but high-volume production, catering and institutional kitchens need the heavy-duty tier so the motor isn't running at its limit every time.
Can a stick blender crush ice or make smoothies?
It's not the right tool for it. Stick blenders are built for blending and emulsifying liquids and soft foods in a pot — soups, sauces, purees, mayonnaise.
