Description
The Bonvue BM11SC is a square countertop wet and dry bain marie that holds prepared food at safe serving temperature under overhead heat lamps while accepting 3x 1/1 GN pans (or a double row of 1/2 GN). It runs as either a dry display or a water-filled wet bain marie, draws 2194W on a single 10A circuit, and is built in 304-grade stainless steel with a tubular frame and an Italian heating element. Pans are sold separately.
Why operators choose the BM11SC
-
Wet and dry operation — switch between water-filled wet holding and dry display from one cabinet to suit different service periods and menus.
-
3x 1/1 GN pan capacity (up to 100 mm deep) — or a double row of 1/2 GN, with the pan divider included so you can split the line into different dishes.
-
+35 to +85°C analogue control with reach-indication light — lets staff dial in a holding temperature that keeps food above the 60°C safety threshold without drying it out.
-
304-grade stainless steel and Italian heating element — food-grade build for daily commercial service, with a heating element specified for steady, even hold temperatures.
-
Overhead warm-white heat lamps with separate switch — presents food clearly at the counter and lets you run lamps with or without the bain heat.
-
Rear 5 mm tempered glass sliding door and 8 mm glass cover — staff serve from behind while a sneeze guard sits between food and the customer.
-
Safety-lock ball-valve drain at the rear — empties the water tray quickly at end-of-day without tipping a hot, full unit.
-
Plug-and-play 10A countertop format — sits on a bench or pairs with the optional BMT trolley, with no hard-wiring required.

Venue suitability
The BM11SC suits cafes, takeaways, bakeries, delis, school and workplace canteens, carveries and small buffet lines that need to hold and present hot food at the counter without cutting a built-in well into the bench. The wet-and-dry switch makes it versatile for venues that run saucy mains at lunch and dry roasts or pastries the rest of the day. For larger hotel buffets or function spaces that need to hold 6+ GN pans in one location, a freestanding 6-pan or trolley-mounted bain marie is the better fit.

Installation & delivery
The BM11SC is a countertop unit — plug it into a standard single-phase 10A outlet, fill the water tray for wet holding or run dry, and allow clearance behind the unit for the rear sliding door and ball-valve drain. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. Backed by Bonvue's 48-month cover (2 years parts & labour plus 2 years parts only) when the product is registered within 14 days of invoice.
Frequently asked questions
Can the BM11SC run as both a dry and a wet bain marie?
Yes. Fill the tray with water for wet holding (better for saucy mains and reheated dishes) or leave it empty to run as a dry warmer under the heat lamps. The control switches and ball-valve drain are designed for daily switching between the two modes.
What pans does it take, and are they included?
It fits 3x 1/1 GN pans or a double row of 1/2 GN pans, up to 100 mm deep. A pan divider is included so you can split the line into different dishes; the GN pans themselves are sold separately. See our bain marie buyer's guide for help matching pan layout to menu.
What temperature range does it hold?
The BM11SC holds from +35 to +85°C using an analogue temperature control with a reach-indication light. For hot-holding food safety in Australia, aim to stay at 60°C or above — more detail in our bain marie temperature guide.
What power supply does it need?
It draws 2194 W at 10 A and runs on a standard Australian single-phase outlet. No hard-wiring is required, so it can be repositioned on the bench as the service line changes.
What are the external dimensions and weight?
The unit measures 1055(W) x 624(D) x 720(H) mm and weighs 58 kg net (163 kg packed for freight). Packed dimensions are 1110(W) x 690(D) x 850(H) mm — useful when planning lift gates and doorways for delivery.
Is the bain marie made of food-grade stainless steel?
Yes. The body is 304-grade stainless steel on a tubular frame, with a rear 5 mm tempered glass sliding door and an 8 mm tempered glass cover so staff can serve from behind while keeping the food under glass at the customer side.
What warranty does it come with?
48 months total — 2 years parts and labour plus 2 years parts only — when the product is registered within 14 days of invoice. Bonvue is an F.E.D house brand, so warranty claims are handled directly through the importer's Australian service network.
Is a matching trolley available?
Yes — if you need to move the bain marie between rooms or service points, the matching Bonvue BMT trolley range turns the BM11SC into a wheeled servery; ask our team to quote the right trolley for this model.
