Commercial cooking equipment for Australian hospitality venues — the full hot-side department in one place, covering gas ranges and ovens, fryers, griddles and chargrills, benchtop and induction units, and specialty cookers. The two biggest categories sit one click away: gas oven ranges for the centrepiece of the cooking line, and commercial deep fryers for everything crumbed, battered or chipped. If you're still working out what your kitchen actually needs, the sections below map the whole department so you can shortlist by equipment type first and compare models second.
Who this equipment is for
Every food business that cooks on site buys from this department — what varies is the mix. A café bistro might run a 600mm four-burner cooktop, a griddle and a single-pan fryer. A pub kitchen adds a chargrill and a bank of fryers to keep schnitzels and chips moving on a Friday night. Fish-and-chip shops live and die by fryer recovery times, and Asian restaurants spec dedicated wok burners with heat output no domestic stove can approach. Food trucks and market stalls lean on compact LPG and benchtop gear, while ghost kitchens in all-electric sites are increasingly going induction from day one. The common thread is commercial duty: heavier burners, thicker plate and components rated for service that runs all day, every day.
What's in scope
Ranges and ovens
The backbone of the line. Gas ranges pair open burners with a static or fan-forced oven base, while standalone ovens run from convection and pizza deck models through to combi steam ovens that steam, roast and bake from a single cabinet. High-speed ovens and commercial microwaves round out the category for quick-service reheats and snack menus.
Fryers
From single-pan benchtop units handling a café's side orders to multi-pan gas floor models built for takeaway volume. The range spans tube-style gas burners, electric element models and induction fryers, with oil capacities from a few litres up to serious production units — and recovery speed, not just capacity, is what separates them in service.
Griddles and grills
Flat-plate commercial griddles cover breakfasts, burgers and toasted sandwiches; chargrills add the sear lines and char flavour that sell steaks; and salamanders mount above the pass for melting, gratinating and finishing plates on the way out.
Benchtop and induction
Counter-height versions of nearly every category above — cooktops, fryers, griddles and grills — plus the induction and infrared cooking range, which suits venues without a gas supply, front-of-house cooking stations, and kitchens looking to cut both the heat in the room and the energy bill.
Specialty cooking
The harder-to-find gear lives here too: Asian-style wok ranges with high-output burners, pasta cookers, kebab machines, rotisseries and tandoori ovens. These are the categories where buying genuinely commercial matters most, because there's no domestic substitute that survives a real service.
How to choose commercial cooking equipment in three steps
With sixteen-odd equipment types in one department, the quickest path to a shortlist is to settle three things in order.
Step 1 — Settle the fuel type
Natural gas is the traditional pick where the site has supply — strong, visible heat that most chefs know — but every gas appliance must be installed by a licensed gasfitter. LPG covers food trucks and sites without mains gas. Electric is the simplest install for ovens, griddles and fryers, and induction delivers the fastest response with the least waste heat. Whichever way you go, confirm whether the unit runs from a standard 10-amp outlet or needs a three-phase connection before you buy.
Step 2 — Size to your peak throughput
Spec for your busiest service, not the average Tuesday. Count covers at peak, work out what share of the menu comes off each appliance, and pay attention to recovery — how quickly a fryer climbs back to temperature after a frozen basket drops, or how evenly a griddle holds heat across the full plate. Undersized gear stalls the whole line; oversized gear burns energy and bench space you'll want back.
Step 3 — Fit the footprint and the ventilation
Measure the position before you fall for a model. Floor units need clearances and service access; benchtop units need a bench rated for the weight and the heat. Most commercial cooking appliances also have to sit under a mechanical exhaust canopy, so confirm canopy coverage and your ventilation requirements with your certifier early — it's far cheaper to plan around than to retrofit.
The category covers the powered appliances a food business cooks on: ranges and cooktops, ovens (convection, combi, pizza deck, high-speed and microwave), deep fryers, griddles, chargrills, salamanders and induction units, plus specialty gear like wok ranges, pasta cookers, kebab machines and rotisseries. It differs from domestic equipment in burner output, build weight and duty cycle — commercial units are designed to hold temperature through hours of continuous service.
Should I choose gas, electric or induction?
Gas suits venues with mains supply and menus built around open-flame cooking — wok work especially. Electric is easier to install and does the job for most ovens, fryers and griddles. Induction is the most energy-efficient of the three, heats fastest and keeps the kitchen cooler, though it needs induction-compatible cookware and, on larger units, a three-phase connection. Plenty of kitchens mix all three across the line.
What's the difference between a commercial range and a cooktop?
A range combines burners with an oven in the base, so one footprint does two jobs — the classic centrepiece of a small or mid-size kitchen. A cooktop is burners only, sitting on a stand or bench, which makes sense when you'd rather pick your oven separately — a combi or convection model, say — or when you simply don't need more oven capacity.
Do you sell commercial air fryers?
Domestic-style air fryers aren't built for commercial duty cycles, so you won't find them in a serious kitchen. The same job — fast, fan-forced cooking with little or no oil — is done at venue scale by convection ovens and high-speed ovens, both of which we stock. And where the menu calls for genuinely fried texture at volume, a proper commercial deep fryer remains the right tool.
Do commercial cooking appliances need an exhaust canopy?
In most cases, yes. Australian ventilation requirements (AS 1668.2) mean cooking processes that produce heat, smoke or grease-laden vapour generally need mechanical exhaust, so plan the canopy alongside the equipment rather than after it. Gas appliances also require installation by a licensed gasfitter with a compliance certificate. Your local council or building certifier can confirm exactly what your fit-out needs.
Do you deliver cooking equipment Australia-wide?
Yes. Commercial Kitchen Store delivers nationwide, covering Sydney, Melbourne, Brisbane, Adelaide and Perth metro plus regional freight routes. Floor models ship on a pallet to a ground-floor point, so check doorway and corridor clearances before ordering — or call our Australian-based team on 1300 111 901 and we'll help you spec the right unit for your kitchen and your site.

Frequently asked questions
What gas type does the GBS4TSLPG use?It runs on LPG only, via a 3/4" rear gas connection. It must be connected and commissioned by a licensed gas fitter. If your venue is on natural gas, choose the natural-gas version instead of converting this unit.
How much cooking power does it deliver? The cooktop produces 204 MJ/h in total, with four cast-iron open burners rated at 42 MJ each, plus a separate U-shape oven burner. That output suits high-volume searing, boiling and simmering during peak service.
What temperature range does the oven cover? The oven is thermostatically controlled from 100°C to 300°C and uses a thermal coupling safety valve. The range covers slow holding through to high-heat roasting and baking. Planning a new fit-out? See our guide to setting up a commercial kitchen.
What safety features are included?Every burner has a flame failure control valve that shuts off gas if a flame is extinguished, and the oven has a thermal coupling safety valve. A continuous pilot and anti-clogging pilot covers keep ignition reliable in daily use.
What are the dimensions and weight? The unit measures 609 mm wide, 855 mm deep and 1128 mm high, and weighs 171 kg net. Packed dimensions are 730 × 1030 × 890 mm at 152 kg, so allow clearance for delivery and positioning.
How do I keep it clean? The burners dismantle for cleaning and a front pull-out crumb tray with an angled handle catches debris. Wipe the stainless front down daily and keep burner holes clear. For a full routine, read our commercial kitchen cleaning guide.
What warranty does it come with?It carries 2 years parts and labour plus 2 years parts only (48 months total) when the product is registered within 14 days of invoice.
The GasMax GBS4TS is a freestanding natural gas oven range that pairs four open-top burners with a thermostatically controlled gas oven, built for cafes, pubs, restaurants and catering kitchens that cook to order through service. It delivers 182 MJ/h total, with each cast-iron burner rated at 38 MJ for fast heat recovery, while the 100–300°C oven handles roasting and baking below the cooktop. A stainless steel front, welded frame and flame-failure protection on every burner make it a hard-wearing, safety-first range for daily commercial use.
Why operators choose the GBS4TS
182 MJ/h across four 38 MJ open burners — high output and quick recovery for searing, boiling and stir-frying through peak service.
Thermostatic gas oven, 100–300°C — controlled roasting and baking in the same footprint as the cooktop.
Flame-failure control on every burner plus oven thermal-coupling valve — gas cuts off automatically if a flame goes out, a core commercial safety feature.
Cast-iron open burners with 300 x 300 mm grates — durable, even support for large pots and woks.
Stainless steel front with galvanised sides and a welded frame — rigid, easy-wipe construction that withstands a busy line.
Anti-clogging pilot covers and dismantlable burners — burner ports resist food-waste blockage and lift out for thorough cleaning.
Pull-out crumb tray and bottom kick plate — faster daily clean-down and simple access for servicing.
Adjustable heavy-duty legs — level the range on uneven commercial floors.

Venue suitability
The GBS4TS suits cafes, pubs, bistros, restaurants and catering kitchens that need four-burner cooktop power and an integrated oven without committing to a six-burner footprint. The 182 MJ/h output and fast-recovery cast-iron burners make it a strong choice for high-turnover a-la-carte service, while the 100–300°C oven covers roasting and baking underneath. It is less suited to very high-volume production kitchens that need six or more burners or a dedicated convection oven.

The Benchstar NP-2SL Electrical Super Steamer is a compact electric steam oven that turns out fresh, high-pressure steam for fast batch cooking, built for cafes, caterers and bakeries working in tight benchtop footprints. A big-boiler design reheats steam to 120–130°C inside a 34L chamber, while 4 pre-set menus and a keep-warm cycle keep service consistent. Running on a single 240V, 4.4kW/20A supply, its stackable, modular body lets you scale steaming capacity without committing to a full combi.
Why operators choose the NP-2SL
Big-boiler steam generation — produces fresh, strong steam and reheats it to 120–130°C for fast, even cooking across the chamber.
34L cooking chamber — 350mm W x 548mm D x 177mm H gives usable tray space in a 672mm-wide benchtop footprint.
Manifold heat recovery — exchanges and recycles residual heat to hold temperature and trim running energy.
4 pre-set menus plus delay cooking — one-touch programs and a timer up to 99min 99sec standardise output across shifts.
Auto water refill & descale function — tops up automatically and runs a scale-cleaning cycle with detergent to protect the boiler.
Keep-warm preservation mode — switches to hold automatically after cooking so plated batches stay at temperature.
Electric waste-drain valve — auto or manual discharge of residual water at daily power-on keeps the boiler clean.
Stackable, modular IPX4 build — stack units to grow capacity and wash down safely with an IPX4 splash rating.

Venue suitability
The NP-2SL suits cafes, caterers, bakeries and small commercial kitchens that need reliable steaming for vegetables, seafood, dumplings, buns and reheating without surrendering bench space to a full-size combi. Its stackable, modular build is ideal where steaming demand grows over time, and the keep-warm cycle helps function venues hold batches through service. It is less suited to high-volume production lines that need continuous roasting and combination convection cooking.
Compare it against larger units in our combi steam ovens range, or browse the wider commercial ovens collection to size the right cooking platform for your kitchen.
Installation & delivery
The NP-2SL runs on a single-phase 240V, 4.4kW/20A supply and should be connected by a licensed electrician where hardwiring is required. Allow clearance for water connection, drainage and the auto-refill line. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. Backed by 1 year parts & labour warranty, extended by a further year on parts when you register within 14 days of invoice.
Frequently asked questions
What can you cook in the Benchstar NP-2SL steamer? It steams vegetables, seafood, dumplings, buns, rice and ready-plated batches, reheating steam to 120–130°C inside the 34L chamber. The 4 pre-set menus and 99min 99sec timer cover most repeat steaming tasks.
What power supply does the NP-2SL need?It runs on a single-phase 240V, 4.4kW/20A circuit. Where hardwiring is needed, have a licensed electrician complete the connection and confirm the circuit can carry the 20A load.
How big is the cooking chamber?The chamber measures 350mm W x 548mm D x 177mm H for a 34L capacity, while the unit itself is 672mm W x 650mm D x 420mm H — compact enough for most benchtops.
How do I clean and descale the NP-2SL?It has an auto water-refill and a water-scale cleaning function that runs with a specific detergent, plus an electric drain valve to discharge residual water at daily power-on. For wider steam-cooking care, see our guide on how to clean a combi oven.
Is a steamer the same as a combi oven? No. This unit steams only, where a combi adds convection and combination modes. To understand the modes, probes and auto-clean features of larger units, read our overview of combi oven modes and when to use them.
Can the NP-2SL be stacked?Yes. It is designed to be stackable and modular, so you can add a second unit to grow steaming capacity without widening the bench footprint.
What warranty does it come with?It carries 1 year parts & labour, plus an additional 1 year parts-only warranty when the product is registered within 14 days of invoice.

Venue suitability
The FT-G705L suits cafes, breakfast bars, takeaways, food trucks and pub kitchens that need a reliable flat-top in a tight bench space. Its single 25 MJ/h burner and 400 mm width make it ideal as a dedicated burger, egg or breakfast station, or as a secondary griddle alongside a larger cookline. For very high-volume sites running continuous flat-top service, a wider whole-module griddle with separate heating zones may be a better primary unit.

Frequently asked questions
Is the FT-G705L natural gas or LPG?As supplied it is configured for natural gas with a single burner rated at 25 MJ/h (7.5 kW). Connection must be carried out by a licensed gas fitter, who can advise on any conversion requirements for your site.
Does it need electricity to run?No. The gas model uses an electronic spark igniter and an access tube for manual ignition, so it operates without a mains power connection — useful for benches and mobile setups without a free power point.
What temperature range does the griddle reach? The fry top is thermostatically controlled between 100 and 300 °C, so you can set and hold a precise plate temperature for searing, breakfast cooking or low-and-slow holding through service.
How big is the cooking surface and footprint? The unit measures 400(W) × 730(D) × 290(H) mm and weighs 42 kg, giving a compact half-module flat-top that fits tight bench spaces. See our guide to countertop griddles for tight kitchens for venting and clearance tips.
How is the griddle cleaned and maintained? The stamped AISI-304 stainless surface has rounded edges and a front-tilted plate that channels grease into a tray holding up to 2 litres. A scraper is included for the plate, and the IPX5 rating allows wash-down cleaning.
Is a gas griddle the right choice for my menu?Gas flat-tops give fast heat recovery and even cooking for high-turnover items like burgers, steaks and breakfasts. For a deeper comparison of plate types and uses, read our complete guide to commercial griddles.
What warranty is included? The FT-G705L carries 2 years parts and labour, plus an additional 2 years parts only when the product is registered within 14 days of invoice — 48 months of cover in total.
