Description
The Moretti Forni COMP S120E/3A/S is a triple-deck bakery oven on a stand, from the modular serieS range. The A designation marks the bakery configuration: 220mm baking chambers rather than the 160mm pizza chambers, a 270°C working range and a choice of baking surface.
Bakery configuration, not pizza
The taller 220mm chamber takes tins, trays and high-rising loaves that a 160mm pizza deck will not, and the 270°C ceiling suits bread and pastry rather than the 450°C a pizza deck runs at.

Stand or prover — which should I choose?
The stand gives open storage beneath and a lower purchase price. The prover version (/L) adds a controlled proving cabinet in the same footprint.
How is this different from the pizza serieS ovens?
The /A bakery configuration has 220mm chambers instead of 160mm and runs to 270°C instead of 450°C.
How much floor space does it need?
1660mm wide by 1443mm deep, 2255mm tall, plus clearance for the fume hood and rear services.
Does it come with a plug?
No. It runs on 415V three-phase and must be hard-wired by a licensed electrician.
