Who pizza prep counters are for
If you assemble food on a line — pizza, salads, sandwiches, burgers — a refrigerated prep counter pays for itself in speed. Pizzerias run them as the heart of the make line: dough on the bench, toppings in the well, finished pizza straight to the oven. How to choose a pizza prep fridge in three steps
Getting the right counter comes down to three questions, answered in order.
Step 1 — Measure your bench length
The counter has to fit your make line without blocking traffic to the oven. Measure the run of bench you can give it, then match that to a two- or three-door model. Buy the length your line needs, not the biggest unit that fits — an oversized counter wastes both floor space and the energy to chill it.
Step 2 — Count your topping pans
Work out how many ingredients you hold on the line at once and how often you refill them. That sets the number and depth of gastronorm pans you need in the well. A busy pizza line with a dozen toppings needs a wider rail and deeper pans than a cafe running four salad components — size the well to your menu, then check the under-counter doors hold a service's worth of backup stock.
Step 3 — Check the refrigeration spec
Confirm the unit holds the well and the cabinet at safe cold temperature in your kitchen's real conditions, not a showroom's. Look at the listed operating range, whether the well is refrigerated or relies on chilled air from below, and the power requirement — most counters run from a standard 10-amp outlet, but larger three-door units can need a dedicated circuit. In a hot kitchen the well is the part that struggles, so keep pans topped up but not overfilled above the cold line, and close any lid or guard between rushes to hold the temperature.
How many doors do I need on a pizza prep counter?
Match the doors to your bench length and storage needs. A two-door counter suits a single-oven pizzeria, a cafe or a food truck where space is tight; a three-door counter gives a longer topping rail and more under-counter storage for higher-volume lines that turn over a lot of prepped product through service.
Does the topping well need its own refrigeration?
It depends on the model. Some counters refrigerate the well directly; others chill it with cold air drawn from the cabinet below. Both can hold food safely, but in a warm Australian kitchen a directly refrigerated well copes better through a long, busy service — check each product's specification for how its well is cooled.
Can I use a pizza prep fridge for salads and sandwiches?
