Commercial cooking equipment for Australian hospitality venues — the full hot-side department in one place, covering gas ranges and ovens, fryers, griddles and chargrills, benchtop and induction units, and specialty cookers. The two biggest categories sit one click away: gas oven ranges for the centrepiece of the cooking line, and commercial deep fryers for everything crumbed, battered or chipped. If you're still working out what your kitchen actually needs, the sections below map the whole department so you can shortlist by equipment type first and compare models second.
Who this equipment is for
Every food business that cooks on site buys from this department — what varies is the mix. A café bistro might run a 600mm four-burner cooktop, a griddle and a single-pan fryer. A pub kitchen adds a chargrill and a bank of fryers to keep schnitzels and chips moving on a Friday night. Fish-and-chip shops live and die by fryer recovery times, and Asian restaurants spec dedicated wok burners with heat output no domestic stove can approach. Food trucks and market stalls lean on compact LPG and benchtop gear, while ghost kitchens in all-electric sites are increasingly going induction from day one. The common thread is commercial duty: heavier burners, thicker plate and components rated for service that runs all day, every day.
What's in scope
Ranges and ovens
The backbone of the line. Gas ranges pair open burners with a static or fan-forced oven base, while standalone ovens run from convection and pizza deck models through to combi steam ovens that steam, roast and bake from a single cabinet. High-speed ovens and commercial microwaves round out the category for quick-service reheats and snack menus.
Fryers
From single-pan benchtop units handling a café's side orders to multi-pan gas floor models built for takeaway volume. The range spans tube-style gas burners, electric element models and induction fryers, with oil capacities from a few litres up to serious production units — and recovery speed, not just capacity, is what separates them in service.
Griddles and grills
Flat-plate commercial griddles cover breakfasts, burgers and toasted sandwiches; chargrills add the sear lines and char flavour that sell steaks; and salamanders mount above the pass for melting, gratinating and finishing plates on the way out.
Benchtop and induction
Counter-height versions of nearly every category above — cooktops, fryers, griddles and grills — plus the induction and infrared cooking range, which suits venues without a gas supply, front-of-house cooking stations, and kitchens looking to cut both the heat in the room and the energy bill.
Specialty cooking
The harder-to-find gear lives here too: Asian-style wok ranges with high-output burners, pasta cookers, kebab machines, rotisseries and tandoori ovens. These are the categories where buying genuinely commercial matters most, because there's no domestic substitute that survives a real service.
How to choose commercial cooking equipment in three steps
With sixteen-odd equipment types in one department, the quickest path to a shortlist is to settle three things in order.
Step 1 — Settle the fuel type
Natural gas is the traditional pick where the site has supply — strong, visible heat that most chefs know — but every gas appliance must be installed by a licensed gasfitter. LPG covers food trucks and sites without mains gas. Electric is the simplest install for ovens, griddles and fryers, and induction delivers the fastest response with the least waste heat. Whichever way you go, confirm whether the unit runs from a standard 10-amp outlet or needs a three-phase connection before you buy.
Step 2 — Size to your peak throughput
Spec for your busiest service, not the average Tuesday. Count covers at peak, work out what share of the menu comes off each appliance, and pay attention to recovery — how quickly a fryer climbs back to temperature after a frozen basket drops, or how evenly a griddle holds heat across the full plate. Undersized gear stalls the whole line; oversized gear burns energy and bench space you'll want back.
Step 3 — Fit the footprint and the ventilation
Measure the position before you fall for a model. Floor units need clearances and service access; benchtop units need a bench rated for the weight and the heat. Most commercial cooking appliances also have to sit under a mechanical exhaust canopy, so confirm canopy coverage and your ventilation requirements with your certifier early — it's far cheaper to plan around than to retrofit.
The category covers the powered appliances a food business cooks on: ranges and cooktops, ovens (convection, combi, pizza deck, high-speed and microwave), deep fryers, griddles, chargrills, salamanders and induction units, plus specialty gear like wok ranges, pasta cookers, kebab machines and rotisseries. It differs from domestic equipment in burner output, build weight and duty cycle — commercial units are designed to hold temperature through hours of continuous service.
Should I choose gas, electric or induction?
Gas suits venues with mains supply and menus built around open-flame cooking — wok work especially. Electric is easier to install and does the job for most ovens, fryers and griddles. Induction is the most energy-efficient of the three, heats fastest and keeps the kitchen cooler, though it needs induction-compatible cookware and, on larger units, a three-phase connection. Plenty of kitchens mix all three across the line.
What's the difference between a commercial range and a cooktop?
A range combines burners with an oven in the base, so one footprint does two jobs — the classic centrepiece of a small or mid-size kitchen. A cooktop is burners only, sitting on a stand or bench, which makes sense when you'd rather pick your oven separately — a combi or convection model, say — or when you simply don't need more oven capacity.
Do you sell commercial air fryers?
Domestic-style air fryers aren't built for commercial duty cycles, so you won't find them in a serious kitchen. The same job — fast, fan-forced cooking with little or no oil — is done at venue scale by convection ovens and high-speed ovens, both of which we stock. And where the menu calls for genuinely fried texture at volume, a proper commercial deep fryer remains the right tool.
Do commercial cooking appliances need an exhaust canopy?
In most cases, yes. Australian ventilation requirements (AS 1668.2) mean cooking processes that produce heat, smoke or grease-laden vapour generally need mechanical exhaust, so plan the canopy alongside the equipment rather than after it. Gas appliances also require installation by a licensed gasfitter with a compliance certificate. Your local council or building certifier can confirm exactly what your fit-out needs.
Do you deliver cooking equipment Australia-wide?
Yes. Commercial Kitchen Store delivers nationwide, covering Sydney, Melbourne, Brisbane, Adelaide and Perth metro plus regional freight routes. Floor models ship on a pallet to a ground-floor point, so check doorway and corridor clearances before ordering — or call our Australian-based team on 1300 111 901 and we'll help you spec the right unit for your kitchen and your site.

The Fagor Kore 700 F-G7115 is a single-tank gas commercial fryer that delivers fast heat-up and rapid oil recovery for high-volume frying. It pairs a 15 L well with three longitudinal heat-transfer tubes and high-efficiency burners for a power-to-litre ratio of up to 1.00 kW per litre, and is built from 1.5 mm AISI-304 stainless steel with laser-cut, robotically welded joints. A cold zone in the base of the well sediments crumbs away from the heat to extend oil life across long service runs.
Why operators choose the F-G7115
15 L single tank — one dedicated well for a single product line, keeping flavours separate and batches consistent.
High power-to-litre ratio (up to 1.00 kW/L) — quick start-up and fast recovery between baskets so output holds during a rush.
Three longitudinal heat-transfer tubes — gas heat is spread through the oil for even temperature and efficient combustion.
Cold zone in the lower well — sediment drops below the burners, preserving oil quality and reducing change-outs.
Thermostatic control 60–200 °C with safety thermostat — precise frying temperatures with built-in over-temperature protection.
1.5 mm AISI-304 stainless construction — laser-cut joints, hidden screws and a robotically welded well stand up to commercial cleaning.
Mechanical ball drain valve — robust, heat-resistant oil draining for fast, safe disposal at end of service.
Flush flue design — perfect combustion lets the flue sit flush with adjoining 700-series equipment for a tidy cookline.

The single 15 L tank suits restaurants, pubs, cafes and catering kitchens that fry one core product — chips, schnitzel or seafood — at steady volume through service. Its high recovery rate handles back-to-back baskets at peak, while the compact 400 mm-wide footprint slots into a tight 700-series cookline. Operations needing to fry multiple products simultaneously, or very high continuous output, are better matched to a twin-tank model.

Venue suitability
The WW-3N suits high-volume Asian restaurants, Chinese and Thai takeaways, food courts and hotel kitchens where three woks need to fire at once through service. The waterless air-gap top makes it a strong choice for venues looking to cut water use and the cleaning burden of a wet-top range, while the 1800mm footprint means it needs a dedicated cookline run rather than a tight bench. Its detachable legs, back and shelf also make it well suited to sites with narrow access doorways.

Frequently asked questions
How does a waterless wok work without running water? The WW-3N uses a unique air-gap cooling design instead of a water-cooled top. The gap keeps the stainless top clean, flat and cool during cooking, so you avoid the running-water cost and waste of a traditional wet-top wok range.
How many burners does the WW-3N have?It has three independent gas burners (no side burners on this model), letting a kitchen run stir-fry, sauce and stock pots at once. Each is fitted with a knee-operable valve for hands-free flame control.
Does it run on natural gas or LPG?The WW-3N is configured for natural gas with duck-bill burners. An LPG option is available with duck-bill burners only; note the LPG model or conversion kit is not available in New Zealand.
What are the dimensions of the WW-3N?The wok measures 1800mm wide x 890mm deep x 1260mm high, with an additional 470mm back section. It ships packed at 920 x 1860 x 550 mm with a packed weight of 236 kg.
Does the WW-3N need a commercial exhaust hood?Yes. A gas triple wok produces significant heat and grease-laden vapour and must sit under a compliant commercial canopy. See our commercial kitchen ventilation guide for canopy and extraction requirements.
Who installs a natural gas wok?Connection must be carried out by a licensed gas fitter to meet Australian standards. The unit carries gas approval number GMK10371, and its legs, back and shelf are detachable to ease access through standard doorways.
Is the WW-3N easy to clean?Yes. The one-piece pressed stainless top has no crevices, and a front gutter with an efficient filter system channels wash-down while stopping solids entering the drains. For more on durable kitchen fit-out, see our guide to stainless steel equipment every restaurant needs.

Venue suitability
The C-G741H suits high-throughput kitchens — restaurants, hotels, pubs, clubs and catering operations — where the 40.6 kW burner bank handles simultaneous boiling, frying and searing while the GN 2/1 oven roasts and bakes below. The 8 cm minimum pot compatibility makes it equally capable with small sauce pans and large stockpots, so it earns its footprint across varied menus. It is less suited to small cafes or sites with limited gas supply, where a two-burner or benchtop unit would fit better.
Browse the full gas oven range or see the complete Fagor cooking lineup to compare burner counts and oven configurations.
Installation & delivery
This is a natural-gas appliance and must be installed and commissioned by a licensed gas fitter; allow clearance for ventilation and front service access. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. The Prometek TD-6NE is a 6-tray combi oven that pairs digital convection with a water-injection steam system to roast, bake, steam and finish across one chamber, built for cafés, bakeries, bistros and catering kitchens. It holds six 600×400mm pans or GN 1/1 trays on 80mm spacing for 170L of usable capacity, runs a 30–280°C range and draws 7.65kW on a 380–415V 3-phase supply. A compact 840mm-wide footprint and electronic controls make it a practical step up from a plain convection oven without committing to a full-size combi.
Why operators choose the TD-6NE
Water-injection steam plus convection — one oven roasts, bakes, steams and regenerates, replacing several single-function units on a tight line.
6 pans at 600×400mm or GN 1/1 — standard gastronorm and bakery-tray sizing slots straight into existing prep workflows.
170L chamber on 80mm tray spacing — enough clearance for trayed bakes and covered dishes while keeping output high.
30–280°C digital control — covers low-temperature holding through to high-heat roasting and browning with repeatable settings.
7.65kW on 3-phase power — quick recovery between loads for steady service through a busy period.
840mm-wide footprint — fits compact kitchens and bench runs where a full-size combi will not.
Stainless construction with electronic controls — wipe-down hygiene and consistent results shift to shift.

Venue suitability
The TD-6NE suits cafés, bakeries, bistros, pubs and catering kitchens that need combi versatility without the footprint of a full-size unit — the 840mm-wide body and 6-tray capacity fit compact lines while the water-injection steam handles bakes, roasts and regeneration from one oven. It is a strong choice for venues stepping up from a convection oven and wanting steam, and for off-site catering where space and a single multi-mode unit matter. It is less suited to high-volume production kitchens that need 10- or 20-tray throughput.
Browse the full range of combi steam ovens or compare against benchtop convection ovens to match capacity to your menu.
Installation & delivery
The TD-6NE runs on a 380–415V 3-phase supply drawing 11A per phase, so it must be hard-wired by a licensed electrician — the power cable and 3-phase plug are not included. Allow clearance around the chamber for airflow and servicing. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. Backed by a 1 Year Parts and Labour warranty.
Frequently asked questions
What can the Prometek TD-6NE cook?It combines digital convection with a water-injection steam system, so a single oven roasts, bakes, steams and regenerates across a 30–280°C range. For a breakdown of combi modes and when to use them, see this combi oven modes guide.
How many trays does it hold?Six trays at 600×400mm or GN 1/1, spaced 80mm apart for 170L of usable chamber capacity — enough clearance for trayed bakes and covered dishes.
What power supply does the TD-6NE need?It draws 7.65kW on a 380–415V 3-phase (3+N, 50Hz) supply at 11A per phase. It must be hard-wired by a licensed electrician; the cable and 3-phase plug are not supplied.
What are its dimensions?External dimensions are 840mm wide, 870mm deep and 830mm high, with a 680×480×520mm chamber. Packed for transit it measures 955×880×980mm at 132kg.
How do I clean a combi oven like the TD-6NE?Run regular cleaning cycles, wipe down the stainless chamber after service and descale the steam system per the manual to protect performance. Our combi oven cleaning guide walks through the routine.
Are trays and pans included? No — grids, pans and the power cable or 3-phase plug are supplied separately, so factor GN 1/1 or 600×400mm trays into your order.
What warranty does it carry? The TD-6NE is covered by a 1 Year Parts and Labour warranty. It is manufactured in China and supplied as a new unit.

The Fagor F-E9121 is a single-tank electric deep fryer from the Kore 900 series, built around a 21-litre oil well and supplied with two frying baskets for high-throughput commercial service. Why operators choose this fryer
21L single tank with two baskets — sustained output for busy fry stations without overcrowding the oil.
18kW heating power — AISI-304 stainless elements sit inside the well and recover oil temperature fast between baskets.
Cold zone at the base of the well — sediment drops below the heat, preserving oil quality and extending its working life.
2mm AISI-304 stainless tops — laser-cut, robot-welded and polished with hidden screws for a hygienic, hard-wearing surface.
IPX5 water protection & swivel elements — heating elements pivot more than 90° for thorough cleaning and reliable wash-down.
Ball-valve oil drain & safety thermostat — a high-temperature ball valve empties the well cleanly and a safety thermostat guards against overheating.
