Commercial cooking equipment for Australian hospitality venues — the full hot-side department in one place, covering gas ranges and ovens, fryers, griddles and chargrills, benchtop and induction units, and specialty cookers. The two biggest categories sit one click away: gas oven ranges for the centrepiece of the cooking line, and commercial deep fryers for everything crumbed, battered or chipped. If you're still working out what your kitchen actually needs, the sections below map the whole department so you can shortlist by equipment type first and compare models second.
Who this equipment is for
Every food business that cooks on site buys from this department — what varies is the mix. A café bistro might run a 600mm four-burner cooktop, a griddle and a single-pan fryer. A pub kitchen adds a chargrill and a bank of fryers to keep schnitzels and chips moving on a Friday night. Fish-and-chip shops live and die by fryer recovery times, and Asian restaurants spec dedicated wok burners with heat output no domestic stove can approach. Food trucks and market stalls lean on compact LPG and benchtop gear, while ghost kitchens in all-electric sites are increasingly going induction from day one. The common thread is commercial duty: heavier burners, thicker plate and components rated for service that runs all day, every day.
What's in scope
Ranges and ovens
The backbone of the line. Gas ranges pair open burners with a static or fan-forced oven base, while standalone ovens run from convection and pizza deck models through to combi steam ovens that steam, roast and bake from a single cabinet. High-speed ovens and commercial microwaves round out the category for quick-service reheats and snack menus.
Fryers
From single-pan benchtop units handling a café's side orders to multi-pan gas floor models built for takeaway volume. The range spans tube-style gas burners, electric element models and induction fryers, with oil capacities from a few litres up to serious production units — and recovery speed, not just capacity, is what separates them in service.
Griddles and grills
Flat-plate commercial griddles cover breakfasts, burgers and toasted sandwiches; chargrills add the sear lines and char flavour that sell steaks; and salamanders mount above the pass for melting, gratinating and finishing plates on the way out.
Benchtop and induction
Counter-height versions of nearly every category above — cooktops, fryers, griddles and grills — plus the induction and infrared cooking range, which suits venues without a gas supply, front-of-house cooking stations, and kitchens looking to cut both the heat in the room and the energy bill.
Specialty cooking
The harder-to-find gear lives here too: Asian-style wok ranges with high-output burners, pasta cookers, kebab machines, rotisseries and tandoori ovens. These are the categories where buying genuinely commercial matters most, because there's no domestic substitute that survives a real service.
How to choose commercial cooking equipment in three steps
With sixteen-odd equipment types in one department, the quickest path to a shortlist is to settle three things in order.
Step 1 — Settle the fuel type
Natural gas is the traditional pick where the site has supply — strong, visible heat that most chefs know — but every gas appliance must be installed by a licensed gasfitter. LPG covers food trucks and sites without mains gas. Electric is the simplest install for ovens, griddles and fryers, and induction delivers the fastest response with the least waste heat. Whichever way you go, confirm whether the unit runs from a standard 10-amp outlet or needs a three-phase connection before you buy.
Step 2 — Size to your peak throughput
Spec for your busiest service, not the average Tuesday. Count covers at peak, work out what share of the menu comes off each appliance, and pay attention to recovery — how quickly a fryer climbs back to temperature after a frozen basket drops, or how evenly a griddle holds heat across the full plate. Undersized gear stalls the whole line; oversized gear burns energy and bench space you'll want back.
Step 3 — Fit the footprint and the ventilation
Measure the position before you fall for a model. Floor units need clearances and service access; benchtop units need a bench rated for the weight and the heat. Most commercial cooking appliances also have to sit under a mechanical exhaust canopy, so confirm canopy coverage and your ventilation requirements with your certifier early — it's far cheaper to plan around than to retrofit.
The category covers the powered appliances a food business cooks on: ranges and cooktops, ovens (convection, combi, pizza deck, high-speed and microwave), deep fryers, griddles, chargrills, salamanders and induction units, plus specialty gear like wok ranges, pasta cookers, kebab machines and rotisseries. It differs from domestic equipment in burner output, build weight and duty cycle — commercial units are designed to hold temperature through hours of continuous service.
Should I choose gas, electric or induction?
Gas suits venues with mains supply and menus built around open-flame cooking — wok work especially. Electric is easier to install and does the job for most ovens, fryers and griddles. Induction is the most energy-efficient of the three, heats fastest and keeps the kitchen cooler, though it needs induction-compatible cookware and, on larger units, a three-phase connection. Plenty of kitchens mix all three across the line.
What's the difference between a commercial range and a cooktop?
A range combines burners with an oven in the base, so one footprint does two jobs — the classic centrepiece of a small or mid-size kitchen. A cooktop is burners only, sitting on a stand or bench, which makes sense when you'd rather pick your oven separately — a combi or convection model, say — or when you simply don't need more oven capacity.
Do you sell commercial air fryers?
Domestic-style air fryers aren't built for commercial duty cycles, so you won't find them in a serious kitchen. The same job — fast, fan-forced cooking with little or no oil — is done at venue scale by convection ovens and high-speed ovens, both of which we stock. And where the menu calls for genuinely fried texture at volume, a proper commercial deep fryer remains the right tool.
Do commercial cooking appliances need an exhaust canopy?
In most cases, yes. Australian ventilation requirements (AS 1668.2) mean cooking processes that produce heat, smoke or grease-laden vapour generally need mechanical exhaust, so plan the canopy alongside the equipment rather than after it. Gas appliances also require installation by a licensed gasfitter with a compliance certificate. Your local council or building certifier can confirm exactly what your fit-out needs.
Do you deliver cooking equipment Australia-wide?
Yes. Commercial Kitchen Store delivers nationwide, covering Sydney, Melbourne, Brisbane, Adelaide and Perth metro plus regional freight routes. Floor models ship on a pallet to a ground-floor point, so check doorway and corridor clearances before ordering — or call our Australian-based team on 1300 111 901 and we'll help you spec the right unit for your kitchen and your site.

The Fagor Kore 700 FT-G710CL is a bench-top natural-gas griddle built for cafes, pubs and high-turnover commercial kitchens that need a dependable flat-top without sacrificing counter space. It delivers 50 MJ/h (15 kW) across two independent burners onto an 800 mm wide, 50-micron hard-chrome cooking surface, with thermostatic control from 100 to 300°C for precise, repeatable results. The chrome plate releases food cleanly and the electronic spark igniter means the unit runs on gas alone — no electrical connection required.
Why operators choose the FT-G710CL
50 MJ/h / 15 kW across two burners — high power with rapid heat recovery, so the plate holds temperature through back-to-back breakfast and lunch rushes.

Frequently asked questions
What is the power output of the Fagor FT-G710CL?It produces 50 MJ/h (15 kW) across two independent burners, giving high heat and fast recovery so the 800 mm chrome plate holds temperature through busy breakfast and lunch service.
Does this griddle need an electrical connection? No. The FT-G710CL uses an electronic spark igniter and runs on natural gas alone, so it requires only a gas connection and continues working during power interruptions.
What is the difference between a chrome plate and a standard steel griddle? The 50-micron hard-chrome surface releases food more cleanly, reduces sticking on delicate items like eggs and wipes down faster than bare mild steel. Our complete guide to commercial griddles explains the plate-type trade-offs.
What temperature range does it cook at?Thermostatic control sets the plate anywhere from 100 to 300°C, letting you sear at high heat or gently hold and cook delicate items with consistent, repeatable results.
What size kitchen does it suit and does it need a hood? Its 800 x 730 x 290 mm bench-top footprint fits tight cooklines, and like all gas griddles it should sit under appropriate extraction. Our guide on countertop griddle venting and hood options covers the requirements for small kitchens.
How is grease managed during service? The cooking surface tilts towards the front, channelling fat and liquids into a removable tray that holds up to 2 litres, and a scraper is included as standard with the chrome model for fast clean-down.
What warranty does the FT-G710CL carry? It comes with 2 years parts and labour, plus an additional 2 years parts only when you register the product within 14 days of the invoice date — up to 4 years of parts cover in total.
The electric Austheat Hotplate Griller is the ideal solution for busy fast food outlets where high speed grilling and toasting is required. Ideal as a hamburger or grill station, the Austheat Hotplate/Grill is designed to work either as a stand alone machine or alongside Austheat Deep Fryers in a modular configuration.
A 12 mm thick heavy-duty machined steel hotplate cooking surface provides the temperature and heat retention required for efficiently cooking foods such as hamburgers, steak, eggs, bacon and pancakes. Features separate controls for the left side and right side of the hotplate providing flexibility in the use of the cooking surface area and ability to conserve electricity by only heating the cooking surface space required.
Each of the two cooking surface sections is controlled by it’s own Cook/Idle (standby) switch. Each has two thermostats – one to control the temperature when switched to “Cook” and the other to control the temperature when switched to “Idle”. This feature allows the chef to quickly turn the temperature of the machine up to “Cook” and down to an “Idle” heat setting in quieter times to conserve electricity. The dual controls have the added benefit of providing a backup in the unlikely event of a component failure.
The toasting compartment below has a dedicated element for perfect one-sided toasting or salamander function. This is unlike many other brands available in the market that use the heat from the hotplate surface for toasting, which can result in uneven toasting. The heat output of the toaster is controlled by an energy regulator. The toaster also has a Cook/Idle (standby) setting. The twin energy regulator controls enable one heat setting to “Cook” and another heat setting for “Idle” periods so the chef can quickly switch between high and low settings in busy or quiet periods. It additionally provides a backup in the unlikely instance of a primary energy regulator failure.

Two small baskets let you run separate batches side by side, while the cold zone keeps oil usable for longer in heavy daily frying. At 400mm wide it still slots into a tight cookline, and dual NG/LPG capability suits both mains-gas and bottled-gas sites. Kitchens needing very high simultaneous output across multiple oil types may prefer a twin-tank model instead.
Compare it against the full range of commercial deep fryers or browse the rest of the Fagor cooking line-up.
Installation & delivery
This is a gas appliance (natural gas or LPG) and must be connected and commissioned by a licensed gas fitter to Australian standards, who should confirm your gas supply suits the 21kW burner load and allow the clearances set out in the installation instructions. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. Backed by 2 years parts and labour, plus 2 years parts only when registered within 14 days of invoice.
Frequently asked questions

Does this fryer run on natural gas or LPG?It is offered for both natural gas and LPG. It must be installed and commissioned by a licensed gas fitter, who should confirm the gas supply and conversion suit the 21kW burner load.
What temperature range does it cover?Thermostatic control runs from 60°C to 200°C, covering everything from gentle holding to high-heat frying of chips, schnitzels and seafood. Our commercial deep fryer buying guide explains how to match output to your menu.
How big is the unit and will it fit a tight cookline? It measures 400mm wide x 930mm deep x 850mm high and weighs 95kg, so the slim 400mm footprint slots into compact lines, and the fitted castor wheels let you roll it out for cleaning.

What warranty is included? The fryer carries 2 years parts and labour, plus an additional 2 years parts-only cover for products registered within 14 days of invoice.
Is it easy to clean?Yes. The 2mm 304 stainless surfaces have polished, laser-cut joints with hidden screws and an IPX5 rating, so jet-water wash-downs and daily wipe-downs are quick, and a high-temperature ball valve empties the well reliably.

The C-G761H suits high-volume restaurants, hotels, pubs and institutional kitchens that run multiple pots simultaneously and need a workhorse oven beneath the burners. The 8.0 kW burners and cast-iron oven floor handle sustained searing, stock work and roasting through service, while the 75 mm bar spacing keeps smaller saucepans stable. It is best matched to kitchens with natural gas and proper ventilation; sites limited to electric supply or very tight benches are less suited.

The TECNODOM TDC-5VH is a 5-tray electric combi oven that runs convection, steam and combination cooking in one chamber, built for cafes, bakeries, pubs and catering kitchens that need consistent batch output from a compact footprint. It holds five 600 x 400mm or GN trays, draws 6.45kW on a 415V three-phase supply, and cooks across a 30-280 °C convection range with full 100 °C steam. Auto-reversing 4-speed fans, a multi-sensing core probe and 99 programmable recipes make it a flexible production oven rather than a single-task unit.
Why operators choose the TDC-5VH
5 x 600 x 400mm or GN tray capacity — steady batch output of bakes, roasts and trays in a footprint under 1m wide.
Convection, steam and combination modes — one oven roasts, bakes, steams and finishes, replacing several single-function units.
Auto-reversing fans with 4-speed control — even browning across every shelf, even at low fan speeds for delicate items.
Full 100 °C, 100% moisture steam — gentle steaming for vegetables, seafood and proving without drying product out.

Venue suitability
The TDC-5VH suits cafes, bakeries, gastropubs, aged-care kitchens and catering operations that need multi-mode cooking but don't have floor space for a full roll-in oven. Its five-tray capacity and 99 stored recipes make it a strong fit for venues running repeatable batch menus, while the steam and core-probe combination handles delicate proteins and proving. It is less suited to very high-volume production sites that would outgrow five trays and need a 10- or 20-tray roll-in model.
Browse the full range of combi steam ovens or compare it against other commercial ovens to size the right oven for your kitchen.
Installation & delivery
The TDC-5VH runs on a 415V three-phase (3N) supply at 6.45kW and must be hardwired by a licensed electrician; allow clearance around the chamber and a water connection for the steam and auto-clean functions. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. It is covered by 1 Year Parts and Labour warranty.
Frequently asked questions
What can the TECNODOM TDC-5VH cook?It runs convection (30-280 °C), full 100 °C steam, and combination modes, so one oven roasts meats, bakes pastry, steams vegetables and proves dough. The 99 programmable recipes let you save up to 5 stages per dish for repeatable results.
How many trays does the TDC-5VH hold?It holds five trays and accepts both 600 x 400mm bakery trays and GN gastronorm pans, giving you flexibility to switch between patisserie and standard catering trays without changing oven.
What is the difference between a combi oven and a convection oven?A convection oven uses fan-forced dry heat only, while a combi adds steam and combination cooking for moisture control. See our guide to combi oven modes, probes and auto-clean for when to use each setting.
What power supply does the TDC-5VH need?It requires a 415V three-phase (3N) supply and draws 6.45kW. Because it is hardwired rather than plug-in, a licensed electrician must complete the connection, along with a water supply for steam and cleaning.
How do I clean the TDC-5VH?It has an automatic 4-stage cleaning cycle with liquid lines that washes the stainless chamber at shift end. For best practice and descaling tips, read our complete guide to cleaning a combi oven.
Does the TDC-5VH include trays? No, pans and trays are not included. The oven accepts 600 x 400mm trays and GN pans, which can be ordered separately to match your menu and production volume.
What warranty does the TDC-5VH come with?It is backed by 1 Year Parts and Labour warranty. Keep proof of purchase and follow the recommended cleaning and service schedule to maintain cover.

Venue suitability
The 22kW burners and 400°C searing heat suit pubs, clubs, grill houses, steakhouses and hotel kitchens that char-grill steaks, burgers and seafood through long, steady services. The reversible grates let one unit switch between ribbed meat grilling and flat fish or vegetable work, while the 12L water-fed tray adds a gentle steam option. At 800mm wide and 271kg it needs a dedicated cookline position with proper extraction, rather than a light-duty or mobile setup.
Compare it against the full range of chargrills or browse the rest of the Fagor cooking line-up.
Installation & delivery
This is an LPG gas appliance and must be connected and commissioned by a licensed gas fitter to Australian standards, with adequate overhead extraction for char-grilling. Allow side and rear clearance per the installation instructions and confirm your gas supply suits the 22kW load. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. Backed by 2 years parts and labour, plus 2 years parts only with product registration.
Frequently asked questions
How hot does the Fagor B-G9101LPG get?The cast-iron grates reach a searing 400°C, sealing the surface of meat, fish and vegetables quickly so the inside stays juicier. The 22kW tube burners drive fast, even heat across the grill.
Does this chargrill run on natural gas or LPG?It is an LPG (bottled gas) model. It must be installed and commissioned by a licensed gas fitter, who should confirm your gas supply suits the 22kW burner load.
Why are the grates reversible? Each cast-iron grate has two faces: a ribbed, grooved side for searing meat and a flat horizontal side for fish and vegetables, so one grill handles both jobs without swapping accessories.
How big is the unit and what does it weigh? It measures 800mm wide x 930mm deep x 850mm high, with a packed weight of 271kg, so it needs a permanent cookline position rather than a light-duty bench.
What ventilation does a gas chargrill need?Char-grilling produces smoke and grease-laden vapour, so it must sit under a compliant canopy with mechanical extraction. Our commercial kitchen ventilation guide explains the requirements.
How do I clean the grill? The cast-iron grates lift out in 170mm sections without tools, the 130mm splash guard dismantles, and the 12L fat tray slides out. The 2mm 304 stainless body is IPX5-rated for jet-water wash-downs.
Is Fagor a good brand for a commercial kitchen?Fagor is a Spanish-engineered professional cooking brand built on heavy-gauge AISI-304 stainless construction. See how it compares in our guide to the best commercial kitchen equipment brands.
What warranty is included? The chargrill carries 2 years parts and labour, plus an additional 2 years parts-only cover with product registration — four years of parts protection in total.

Venue suitability
The twin 15 L tanks and 1.00 kW/litre recovery make the F-G7215 a strong fit for high-volume sites that fry continuously — pubs, bistros, fish-and-chip shops, fast-casual venues and catering kitchens that need to run chips and a second product line in parallel. The flush-flue, perfect-combustion design suits operators building a matched 700-series cookline. Single-product, low-turnover cafes that only fry occasionally may be better served by a smaller benchtop unit.

Installation & delivery
As a gas appliance the F-G7215 must be installed and commissioned by a licensed gas fitter, with a 230 V power point for the control circuit and adequate ventilation and clearances to surrounding equipment. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. Backed by a 4-year warranty — 2 years parts and labour plus 2 years parts only when registered within 14 days of invoice.
Frequently asked questions
What is the total oil capacity of the Fagor F-G7215?It has two independent tanks of 15 L each, giving 30 L of total frying capacity. Running each well separately lets you fry two products at once without flavour transfer.
Is the F-G7215 gas or electric? It is a gas-heated fryer using high-efficiency burners with three longitudinal heat-transfer tubes per well. A 230 V power connection (0.1 kW) runs only the control circuit, not the heating.
What temperature range does it reach?Thermostatic control covers 60–200 °C, with a separate safety thermostat for overheat protection. The high power-to-oil ratio of up to 1.00 kW/litre gives fast recovery between batches.
How does the cold zone help with oil life? The lower part of each well stays cooler, so crumbs and sediment settle away from the heat rather than burning. This preserves oil quality longer — see how often deep fryer oil should be changed for service intervals.
Does it need a professional installation?Yes. As a gas appliance it must be connected and commissioned by a licensed gas fitter, with a 230 V power point for the controls and correct ventilation and clearances.
How do I choose between a twin-tank gas fryer and other models?Twin 15 L tanks suit high-volume venues frying multiple products; lower-turnover sites may prefer a smaller benchtop unit. Our commercial deep fryer buying guide walks through sizing and fuel choice.
What warranty does the F-G7215 carry? It is covered by 2 years parts and labour plus an additional 2 years parts only when the product is registered within 14 days of invoice — a 4-year total parts warranty.
What are the external dimensions? The fryer measures 800 mm wide × 730 mm deep × 850 mm high and weighs 128 kg, fitting a standard 700-series cookline footprint.

Venue suitability The ME7-10BM suits high-output kitchens that batch-cook liquids daily — production caterers, hospitals, aged-care facilities, central kitchens and large hotels. Its indirect bain-marie heating is the deciding feature for anyone cooking milk-based sauces, custards or fine stocks, where direct heat would scorch the batch. Smaller a-la-carte venues with limited three-phase capacity or lower volumes are generally better served by a compact stockpot or tilting pan. Explore the full range of boiling pans or browse more Fagor cooking equipment to match it with the rest of your cookline. Installation & delivery The ME7-10BM runs on 9kW 3~N 415V three-phase power and must be hardwired by a licensed electrician; it also needs cold and hot water connections plus a drain. Dispatched Australia-wide from our Sydney HQ and partner warehouses in Melbourne, Brisbane, Adelaide and Perth. Backed by a 2-year parts-and-labour warranty, extended to 4 years on parts with product registration. Frequently asked questions What capacity is the Fagor ME7-10BM?It has an 80L cooking capacity, suited to large batches of stock, soup or sauce in a single production run for high-volume kitchens. How does indirect heating work on this boiling pan?A heated water jacket surrounds the inner vessel, so the food never touches the heat source directly. This even, gentle heat prevents scorching — see our bain-marie guide for how the water-bath principle works in practice. What power supply does the ME7-10BM need?It draws 9kW on a 3~N 415V three-phase supply and must be hardwired by a licensed electrician. Confirm your site has adequate three-phase capacity before installation. What are the dimensions and weight? The unit measures 700 x 775 x 850mm (W x D x H) and weighs 197kg, with a packed footprint of 915 x 740 x 1160mm for transport and doorway clearance. Is it suitable for cooking delicate sauces and milk-based liquids?Yes. The indirect bain-marie design holds an even temperature without hot spots, making it well suited to custards, milk and fine stocks. For high-volume liquid cooking technique, our volume-cooking guide covers jacketed vessels in detail. What warranty is included? The ME7-10BM comes with 2 years parts and labour, plus an additional 2 years parts only when you complete product registration. How is the boiling pan filled and drained? It has taps for cold and hot water inlet, electrovalve pan filling with a hot/cold selector, and a drainage tap, plus separate filling and drainage taps to control the bain-marie chamber level.
