Modular ice makers for Australian hospitality venues — the ice-making "head" unit on its own, designed to sit on top of a separate storage bin or dispenser you choose to match your daily demand. A modular ice maker isn't a complete machine out of the box: it produces the ice, and a paired bin holds it, which is exactly what makes the format so flexible for high-volume bars, hotels, clubs and busy kitchens. Need a unit with the bin already built in? Look at our self-contained under-bench ice makers instead; for the full range across both formats, browse all commercial ice makers.
Who modular ice makers are for
If your venue gets through a lot of ice and your demand might grow, the modular format earns its keep. Because the head and the bin are separate purchases, you can match daily ice output to your busiest service and pick a storage capacity to suit how often deliveries or top-ups happen. Hotels, pubs, RSLs, large cafés and catering operations run head units producing well over 100 kg a day on a tall bin; cocktail bars choose the head by the ice shape their drinks programme needs. When demand climbs, you keep the head and step up to a bigger bin — or vice versa — without replacing the whole machine.
What's in scope
By ice shape
The head unit determines the ice you get. Cube and crescent ice is the all-rounder — slow-melting and clear, it suits drinks service and bagging. Flake ice is soft and packable, the choice for seafood and salad displays, fishmongers and food prep. Nugget (or "pebble") ice is chewable and beverage-friendly, popular in venues where customers love the soft-chew ice. Pick the shape first, because it's fixed to the head you buy.
By daily output
Modular heads are rated in kilograms of ice produced per 24 hours. Smaller heads sit around 80–150 kg/day for mid-size venues; larger units climb past 250 kg/day for high-turnover bars, hotels and function venues. Output drops in hot, humid conditions, so an Australian summer kitchen will make less than the lab-rated figure — size with headroom.
Heads, bins and dispensers
The head pairs with a storage bin sized to its output, or with an ice dispenser where front-of-house staff or customers serve themselves. Bin compatibility matters: the head has to physically seat on the bin's top opening, so we list compatible pairings on the product pages. For bar service and self-serve setups, see our ITV ice makers, and for portable holding and transport, our commercial ice tubs and storage bins.
How to choose a modular ice maker in three steps
Choosing the right modular ice maker comes down to three questions, in order.
Step 1 — Work out your daily kg output
Estimate how much ice your venue uses across a full trading day at peak, not on a quiet day. Add a buffer for summer, when production falls and demand rises. That kilogram figure points you to the right head capacity — and remember the rated output assumes cool conditions, so a head that's borderline on paper will struggle in a hot kitchen.
Step 2 — Pick the ice type for your use
Match the ice shape to what you actually do with it. Cube or crescent for drinks and bagging; flake for seafood, salad bars and food displays; nugget for soft-chew beverage service. The shape is locked to the head, so decide this before you compare models.
Step 3 — Pair the head with the right bin or dispenser
Size the storage bin to roughly match a day's production so you're never caught short or storing ice that melts unused, and confirm the bin is compatible with your chosen head. If staff or customers serve ice directly, choose a dispenser instead of a plain bin. Allow for the combined height and the water and drainage connections the head needs.
A modular ice maker is the ice-producing "head" unit on its own, designed to sit on top of a separate storage bin or dispenser. The head makes the ice; the bin holds it. Buying the two parts separately lets a venue match production capacity and storage independently — the reason the format suits high-volume and growing operations.
Do I need a separate bin with a modular ice maker?
Yes. A modular head produces ice but has nowhere to store it, so it must be paired with a compatible storage bin or an ice dispenser. The bin has to suit both the head's daily output and its physical footprint, which is why we list compatible pairings on each product page. If you'd rather buy a single unit with storage built in, a self-contained ice maker is the simpler option.
What's the difference between a modular and a self-contained ice maker?
A modular ice maker is a head-only unit that needs a separate bin or dispenser; a self-contained (or under-bench) ice maker has the ice maker and storage in one cabinet. Modular suits higher volumes and lets you scale storage independently, while self-contained units are tidier for smaller venues and tight spaces where one fixed capacity is enough.
What size modular ice maker do I need?
Size by your peak daily ice use, then add headroom for hot Australian conditions, when output falls and demand rises. Heads are rated in kilograms produced per 24 hours — common venue sizes run from around 80–150 kg/day up to 250 kg/day and beyond for high-turnover bars, hotels and function centres. Choose a head at or above your peak figure rather than your average day.
Which ice type should I choose — cube, flake or nugget?
Cube or crescent ice is the all-rounder for drinks service and bagging; flake ice is soft and packable for seafood, salad bars and food displays; nugget ice is the chewable favourite for beverage-focused venues. The shape is fixed to the head you buy, so pick it before comparing models. Our buyer's guide covers the trade-offs in more detail.
Why does my ice maker produce less in summer?
Ice makers are rated under cool, controlled conditions, so production drops as ambient and water temperatures rise. In a hot Australian kitchen through summer, a head can make noticeably less than its quoted figure while your venue needs more ice — which is why we recommend sizing with a buffer rather than to the rated number.
Do you deliver modular ice makers across Australia?
Yes. Commercial Kitchen Store ships nationwide, and Australian-based phone support is available on 1300 111 901 if you need help matching a head to the right bin or sizing for your venue. For cover details, see our warranty and service information.

PURE & COOL COMMERCIAL ICE MAKER
The FM-750AKE Series Commercial Ice machines produce up to 530kg of flaked ice a day which is often used for produce display of fish, fresh food and bottled beverages. In the medical field, flake ice is also used for organ transportation. Utilizing the most efficient ice making process due to the unique auger system, water consumption is equal to ice production.
“Freeze Burn” is no longer an issue when displaying fresh fish or produce.
Carbon auger bearings have a longer life expectancy than roller bearing, reducing maintenance costs.
Automatic flush function helps keep the ice making system clean.
Controller board with Operational Status display assists in troubleshooting.
Due to the auger system, water consumption is equal to ice production.
Can be converted to Nugget ice by changing the extruding head and cutter (parts at an additional cost).
2 year parts & labour on entire unit, 5 year (parts only) on compressor & air-cooled condenser coil.
